it's yummy, it's purple!

Resident best friend, Emily, invited me over for dinner this past Sunday. She’s a great cook and has no fear of new recipes, no matter how complicated. She whipped up some Chicken Cassoulet using a recipe from her Eating Well cookbook and it was really good! I have to say, though, that the highlight of the meal, for me, was the POTATOES! Starchy vegetables are not on my approved “flight plan” at the moment but I had to taste these little wonders. This particular type of potato has shown in studies that, when consumed daily, it can help reduce blood pressure without causing weight gain (I KNOW – and DID I MENTION THEY ARE PURPLE ?!) Emily boiled and mashed the potatoes then lightly seasoned them with some EVOO and salt. A++
