all about the lemons

For the last 2 weeks I’ve obsessed over lemons and my first completed pattern collection, Lemon Blossom. I’m very excited for the future in my work and personal life for the first time in a long while. My daughter is thriving, we are finally settled in our new place after a major move and closer to family which is a totally different experience.

To celebrate my first collection I’m making something sweet! Lemon blossoms are lemon shortbread cookies with a lemon glaze. They are so good, and you can make mini gelato sandwiches with them! Better still, the recipe is very simple:

1 cup Sugar
1 cup Butter (softened)
3 cups All-Purpose Flour
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
1/4 teaspoon Salt
1/3 cup Lemon Juice (cookie)
3 tablespoons Lemon Juice (glaze)
1 1/2 cups Confectioner’s Sugar (glaze)

Mix sugar with softened butter with an electric mixer until combined well, then add the lemon juice and mix again.

In another bowl combine the dry cookie ingredients, mix with spoon. Then add the dry ingredients to the wet, mix until dough forms. Form dough into a ball, wrap with plastic wrap and refrigerate 1 hour.

For the glaze:
Combine confectioner’s sugar and lemon juice (until there are no lumps.) Add a drop of food coloring for some extra color, yellow or even pink would be nice.

Rolling and cutting cookies:
Roll your dough out to 1/4 inch thickness and cut with round cookie cutter (unless you have a lemon shape!) Place on ungreased baking sheet and bake at 400 for 7-8 minutes (depending on your oven.) Once the cookies are cool spoon your glaze onto the cookie and let set for about an hour.

See!? So easy! Depending on how big your cookies are this recipe could yield 2-3 dozen.
